Food on Friday: Soft Bake Peanut Butter Cookies

My grandmother never left behind her recipe for peanut butter cookies. She had one written down, in her own hand writing, but it turned out to not be hers. So I had to do my own.

Soft Bake Peanut Butter Cookies

1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 stick margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 tsp vanilla extract
1 eggs
1 cup peanut butter

Combine flour, baking soda and salt in small bowl. Beat margarine, granulated sugar, brown sugar and vanilla in large mixer bowl. Add egg & peanut butter, beat well; gradually beat in flour mixture. Let chill in refrigerator. Form into walnut sized balls and place onto ungreased baking sheets. Bake in preheated 375ยบ F oven for 10 to 12 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
